Show Title:    "Handheld Computers in the Classroom"

Palm Pilot Show Description:  Using Palm Pilots and Tablet PC in Elementary School

Principal, Elsie Semien tells us about a grant the school was awarded from Hewlett-Packard.  The grant funds were used to purchase digital equipment which is being used in a classroom environment.

Teachers, LaShondra Taylor, Elizabeth Stelly, April Stone, and Crystal Compos tell us about the use of Handheld Computers in their classrooms.

April Stone conducts two lessons, one Math, and one Creative Writing.

Show Title: Healthy After School Snacks
Show Description: This starts our "Healthy Students/Healthy Families" show series.

In this show Wesley Hebert and his mom Tanya Bollich, join Mandy Armentor in the kitchen at the St. Landry Parish LSU Agricultural Center in Opelousas.
Wesley is a 4th grade student at Highland Elementary School in Eunice.  Mandy is an Asistant Extension Agent, and Registered Dietitian with the LSU AgCenter in Vermilion Parish.

All of our guests are preparing 2 healthy after school snacks:
·     Hi Fiber Crunch Mix
·     Strawberry Banana Smoothies

The vocabulary words for this show are:
Melt     Drizzle     Cereal     Pretzel     Toss

Recipe - Hi Fiber Crunch Mix
3 cups of toasted O’s cereal
3 cups wheat squares cereal
1 cup pretzels or dry roasted peanuts
¾ cup peanut butter
½ cup honey
2 tablespoon canola oil
Supplies
·     Dry ingredient measuring cups
·     Liquid measuring cup
·     Measuring spoons
·     Large mixing bowl
·     Small nonstick sauce pan
·     Spatula
·     Large cooking spoon to mix
·     Large bowl for final product
·     Several glass mixing bowls to place measured items in
·     Small serving bowl

Measure cereals and peanuts or pretzels and place in a large mixing bowl.   Measure out peanut butter and place in sauce pan.   Measure out honey and place in sauce pan and do the same for the canola oil.   Please the sauce pan over medium heat and melt mixture until smooth, thin, and mixed well.   When peanut butter mixture is smooth and thin remove from heat and drizzle over cereal.   Toss cereal with a spoon to coat.  Serve in a small bowl.   You can store the remainder of the mix in a covered container in a cool dry place for about 1 week.

Recipe -Strawberry-Banana Smoothies
3 (6 oz.) containers of low-fat strawberry yogurt
1 (10 oz.) package frozen strawberries
1 medium banana sliced
¼ cup fat free milk

Supplies
·  Cutting board ·  Sharp knife ·  Blender ·  4 glasses to put finished product in ·  Spoons ·  Liquid measuring cup ·  Colander ·  2 medium sized bowls to put cut and cleaned fruits in ·  Small glass to serve

Place all ingredients in a blender.  Cover and blend on high speed until smooth about 30 seconds.  Pour into glasses and serve immediately.  Serves 4. One smoothie provides about 250 calories, 3 g fat, and about 200 mg of Calcium.

Show Title: Quick, Easy Heart Healthy Dishes

In this show Kennedy Zachary and her mom Quzette Zachary, join Mandy Armentor in the kitchen at the St. Landry Parish LSU Agricultural Center in Opelousas.

Kennedy is a 5th grade student at Northeast Elementary School in Opelousas. Her mom is the Parent Educator at Northeast Elementary School. Mandy is an Assistant Extension Agent, and Registered Dietitian with the LSU AgCenter in Vermillion Parish.

Our guests are preparing 2 quick healthy dishes:

  • Guacamole Dip
  • Heart Healthy Tacos

  • The vocabulary words for this show are:

    Mash     Avocado     Taco      Brown     Crumble

    Recipes:
    Guacamole            Guacamole
    2 ripe avocados
    1 small onion, minced
    2 cloves of garlic, minced
    1 small tomato, chopped
    1 lime, juiced
    Salt and pepper to taste
    Chips to dip
    Peel and mash avocados. Stir in onion, garlic, tomato, ½ of the lime juice, salt, and pepper. Mix well and taste dip. Add more lime juice, salt and pepper if needed.
    Cover, chill, and serve as a dip or as a garnish.


    Tacos            Tacos
    12 hard taco shells with 0 g trans fat
    12 whole wheat soft taco shells
    2 pounds ground turkey breast or lean ground beef
    2 packages taco seasoning mix (Low Sodium version)
    1 1/3 cups of water
    1 head of lettuce shredded or 1 package of shredded lettuce
    2 tomatoes, chopped or diced
    1 jar mild taco sauce
    1 package (2-3 cups) low fat or regular shredded cheddar cheese
    1 small container of fat free sour cream

    Crumble ground turkey or beef into a large non stick skillet and brown until cooked.
    Drain excess fat or drippings from meat in a colander.
    Return drained meat to skillet and add taco seasoning packets and water to meat.
    Cook on medium low heat for 5-10 minutes.
    While meat is simmering wash tomatoes and dice them and place in a bowl.
    Next take cheese, lettuce, and taco sauce in put some in small bowls.
    When meat is done, take a tortilla, spoon meat into tortilla and top with lettuce, cheese, tomatoes, and sour cream.

    Serve immediately
